KFB Foodie Talk: How to make Spinach and purple cabbage salad




For our newbies, the KFB foodie talk column - handled by Dobby of Dobbysignature -  is basically for ladies and 'guys' that are interested in learning how to cook better  ;).
Simple yet eccentric, this spinach and purple cabbage salad with cucumber & tomato is a tasty salad which is guaranteed to please your taste buds. This is an adapted recipe from a foreign site so it's safe to say its an acquired taste for me. Very new indeed but i enjoyed every bit of it. It was my first time eating spinach (Amunututu "Yoruba", Gborongi "Igbo") raw and also trying out purple cabbage too and here's my conclusion; The purple cabbage is no different from the normal green cabbage except for the attractive color. Eating spinach raw is really healthy too. 
 
This salad is a healthy satisfying meal on it's own and can be a perfect accompaniment to dishes like fried rice, jollof rice, coconut rice, spaghetti and just anything you can think of. How to make spinach and purple cabbage salad
• Prep Time:  10 minutes
• Cook Time:  Nil
• Yield:           5 Servings
• Misc:           Serve Chilled
• Level:          Easy

Ingredients:::
• 3 handfuls Spinach
• 1 small sized purple cabbage
• 5 small sized tomatoes
• 1 small cucumber
• Salad dressing - to taste

Directions:::
Step 1: Remove the stems from the spinach and rinse thoroughly. Leave to drain and set aside. Chop the purple cabbage, rinse and set aside. Rinse the cabbage, remove the seeds within and dice, set this aside. Rinse and chop the tomatoes. 
Step 2: In a large bowl, toss all the vegetables together and mix. Chill in the refrigerator.
Step 3: When you're ready to consume, drizzle with your favorite salad dressing i.e mayonnaise, salad cream.
