KFB Foodie Talk: How to make Minced meat stew

For our newbies, the KFB foodie talk column - handled by Dobby of Dobbysignature -  is basically for ladies and 'guys' that are interested in learning how to cook better  ;).

Minced meat stew is a popular type of stew made from ground beef. It's simply delicious and is usually served alongside spaghetti, potatoes, rice, plantain and a host of other meals. If you don't have minced meat available or don't have tools to grind your meat as shown below, you could use corned beef for this if you've got that available. This meal is usually a favorite with kids, and most people can't seem to get enough of it. There are a lot of things i love about this stew the first being that it's pretty easy to make. Next, it's really affordable especially with the fact that i didn't spend over a thousand naira for the whole meal for four people which is pretty good. Do give this a try soon and lemme know the outcome.

Minced meat stew recipe
Prep time:
15 minutes
Cook time: 30 minutes
Total time:  45 minutes
Meal category: Stews & Sauces
Ingredients:::
• 10 pieces of beef chunks
• 5 medium sized plum tomatoes
• 3 small fresh pepper
• 1 medium sized red onion
• 4 cloves garlic
• 1/2 cup vegetable oil
• 1 tsp. thyme
• 1 tsp curry powder
• 2 seasoning cubes
• salt to taste
Additional ingredients (Optional)
• 1 cup sweet corn
• a small bunch spring onion
• 2 carrots
• 1/2 cup green peas
Preparation:::
Step 1: The first step is to grind the meat. This is really easy to do if you have a mincer, grinder/ food processor. It also saves a whole lot of stress and money. To start, Wash the meat thoroughly with clean water then slice off the elastic muscles with a sharp Knife. Most times the grinder is not able to grind this part of the meat but a mincing machine would do that. Dice the meat into smaller chunks and place in the grinder then you grind. To skip this process, simply get minced meat.
Step 2: Chop the carrots, spring onion and peas.Set this aside.
Step 3: Place the ground meat in a small pot, add the seasoning, thyme, curry powder, salt to taste and a little water. Leave to cook for about 10 minutes - Set aside
Step 4: Peel the garlic and onion skin, remove the stem from the pepper and rinse everything including the tomatoes. Place them all in a blender, add a little water and grind till smooth. Pour the blend into a pot and boil till all the liquid in the pot dries up leaving the concentrated paste.
Step 5: Pour the blend into a medium sized pot, add the vegetable oil and fry for about 5 minutes on low heat while stirring constantly.
Step 6: Pour in the cooked meat and leave to cook for 12 minutes. Add the chopped vegetables and leave to simmer for 3 minutes. Turn off the burner and serve with Spaghetti, macaroni, rice, plantain, yam, potato or even bread.
